While both spring water and mineral water come from aquifers under the ground and are bottled without having undergone any processing or treatment, mineral water must guarantee that its make-up and mineral content are consistent and stable.
This guarantee of stability and original purity, which spring water does not have to give, is strictly regulated and involves a battery of physical, chemical and microbiological tests, carried out at different sampling points in the aquifer itself, as the water emerges, in tanks and from the finished bottled product at various times of day, from taps, etc. These tests are performed every two hours, for example, in the Abatilles laboratories.
